Vegan Kimchi Noodles

My wife says to me one day, "watching these Korean dramas, I feel like eating kim-chi noodles, please make me some...the kim chi is in the fridge".

Now kim chi like Vegemite/Durian anything else half gross, is an acquired taste, it is smelly, pungent, spicy, chilli & apparently very good for you because of the good bacteria in the fermentation process.

Well I did not hold back, I came up with this concoction. My wife loved this so much she asked me to make it two meals in a row...I had to share it, serving for one in less than 10 minutes...

2 packet yellow thin chinese noodes (boil)
2 baby bok choi
one hand grab of snow peas
one hand grab of cherry tomatoes
1 tablespoon kecap manis (thick sweetened soya sauce)
3-4 generous forking of kim chi
1 teaspoon vegetarian balachan or brown rice miso or stock
1 table spoon liquid aminos or soy sauce
1 table spoon fried onions (dried ones)
2-3 slices of your choice of soy protein pan fried in sesame oil...(I use tofurkey)

Boil noodles, when done throw in the bok choy sliced vertically in quarters, and the snow peas, wait 30 seconds drain, mix everything, garnish with the onions and the soy protein of your choice...walah! great tasting kim chi noodles
